Silken Tofu Chocolate Pudding
Silken Tofu Chocolate Pudding is one of those quietly brilliant desserts — simple ingredients, effortless preparation, and a texture that surprises people every time.
Silken tofu creates a luxuriously smooth base, blending into a pudding that’s rich and velvety without feeling heavy. Cacao powder gives this version a deeper, more dark-chocolate intensity, balanced by just enough maple syrup and naturally sweet Medjool dates. The result is complex but clean — chocolate forward, gently sweet, and finished with a hint of vanilla and lime-bright freshness.
The dates are briefly softened before blending, ensuring a perfectly silky texture. And because the pudding is blended rather than cooked, it comes together in minutes. After a short chill in the refrigerator, it firms into a spoonable dessert that feels elegant enough for company yet simple enough for a weeknight treat.
This recipe is also incredibly versatile. It can lean toward mocha, citrus, spice, mint, or nutty variations depending on your mood. Serve it straight from the bowl, layer it into parfaits, spoon it into tart shells, or top it with berries and toasted coconut.
It’s a reminder that dessert doesn’t have to be complicated to be deeply satisfying — just thoughtfully made.

Silken Tofu Chocolate Pudding
Ingredients
- 1 (16 oz) package silken tofu, drained
- ⅓ cup cacao powder
- 3 tbsp pure maple syrup
- 2 Medjool dates, pitted
- 1 tsp vanilla extract
- 3 tbsp milk (dairy or non-dairy)
- 1 tbs date soaking liquid
- Pinch of salt (optional, but recommended)
Instructions
- Place pitted dates in a small bowl and cover with hot (not boiling) water. Let soak 5–10 minutes to soften. Drain, reserving 1 tablespoon of the soaking liquid. If your dates are very fresh and soft, you can skip soaking.
- Add tofu, cacao powder, maple syrup, softened dates, vanilla, milk, reserved soaking liquid, and salt to a blender or food processor.
- Blend 45–60 seconds, scraping down sides as needed, until completely smooth and creamy.
- Taste and adjust the flavor by adding another teaspoon of maple syrup for sweetness or 1–2 tablespoons milk if it feels too thick.
- Pour into 4 individual serving containers if desired and refrigerate at least 30 minutes to set and deepen flavor.
