- juice and zest of 1 lime
- ½ tbsp balsamic vinegar
- 2 tbsp chopped fresh mint (or basil)
- Salt and pepper to taste
- ¼ cantaloupe, cut into bite size pieces
- ½ cucumber, diced
- ½ avocado, diced
- 4 ounces fresh mozzarella, diced
- 1 tbsp finely chopped red onion
- 2 cups arugula or other salad greens
- 1 tbsp sunflower seeds
Instructions
- Whisk together the olive oil, lime juice, balsamic vinegar, mint, salt, and pepper in a medium bowl.
