  • ½ tbsp balsamic vinegar
  • 2 tbsp chopped fresh mint (or basil)
  • Salt and pepper to taste
  • ¼ cantaloupe, cut into bite size pieces
  • ½ cucumber, diced
  • ½ avocado, diced
  • 4 ounces fresh mozzarella, diced
  • 1 tbsp finely chopped red onion
  • 2 cups arugula or other salad greens
  • 1 tbsp sunflower seeds

Instructions
