Beet & Blueberry Smoothie

This bright, earthy Beet & Blueberry Smoothie blends the natural sweetness of beets with juicy blueberries, crisp cucumber, and a splash of lime for a refreshing balance of sweet, tart, and herbal flavors. Fresh tarragon adds a subtle anise note that complements the berries and beets beautifully, while ginger gives it a gentle warming finish. Light, vibrant, and hydrating, it’s a delicious way to nourish your body—especially when you want to feel a little lighter and more refreshed.

If you’re looking to support your lymph system, this smoothie has it all. Beets help keep lymph fluid moving, while blueberries protect and energize at a cellular level. Ingredients

  • 1 tablespoon chia seeds
  • ½ cup canned beets, drained and rinsed
  • 1 cup frozen blueberries
  • ½ cup cucumber, chopped
  • ¼ avocado
  • ¼ cup black beans (drained and rinsed if canned)
  • 1–2 teaspoons fresh tarragon leaves (or ½ teaspoon dried tarragon)
  • Juice of ½ lime
  • 1 cup water or coconut water (add more for thinner consistency)
  • 1-inch piece fresh ginger (peeled) or ¼ tsp ground ginger
  • 1 teaspoon raw honey or maple syrup (optional)
  • 1–2 ice cubes (optional)

Instructions

  1. If desired, soak the chia seeds in 1/4 cup water for 10 minutes to soften into a gel.
  2. Add all ingredients to a blender.
  3. Blend on high until smooth and creamy.
  4. Taste and adjust: add more lemon for brightness, or honey for sweetness.

Notes

  • Note: Want to use raw beets instead? Use ½ of a small raw beet, peeled and chopped. For easier blending, lightly steam or grate the beet before adding to your smoothie if your blender isn’t high-powered.
