Brown Rice, Black-Eyed Pea & Herb Pilaf
Ingredients
- 1 tbsp olive oil
- 1/3 cup finely chopped onion
- 2 cloves garlic, minced
- 1 cup long-grain brown rice
- 2½ cups low-sodium vegetable or chicken broth
- ½ tsp kosher salt, or to taste
- ¼ tsp freshly ground black pepper
- ½ tsp dried thyme
- 1 can (15 ounces) black-eyed peas, rinsed and well drained
- ¼ cup dried cranberries, chopped
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh dill or chives
- 1 tbsp fresh lemon juice
- 1 tsp finely grated lemon zest
- ¼ cup toasted walnuts or pumpkin seeds, optional
Instructions
- Heat the olive oil in a medium saucepan over medium heat. Add the onion and cook for 4–5 minutes, stirring occasionally, until softened.
- Stir in the garlic, brown rice, thyme, salt, and black pepper. Cook for 1–2 minutes, stirring, to lightly toast the rice and coat it with the oil and seasonings.
- Add the broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 25–30 minutes.
- Stir in the black-eyed peas and dried cranberries. Cover again and continue cooking for another 10 minutes, or until the rice is tender and most of the liquid has been absorbed.
- Remove from the heat and let stand, covered, for 5–10 minutes.
- Fluff gently with a fork, then stir in the parsley, dill or chives, lemon juice, and lemon zest. Taste and adjust the seasoning as needed.
- Sprinkle with toasted walnuts or pumpkin seeds, if using, just before serving.
Notes
- This pilaf keeps well in the refrigerator for up to 4 days and can also be frozen in meal-size portions.
- Cool completely before freezing, then store in airtight containers or freezer-safe bags for up to 3 months. Reheat with a splash of broth or water to restore moisture.
